Tropezz started as a successful restaurant in Greenbelt in 2006. In two years of operation, the restaurant was chosen as one of Manila’s Best by the Philippine Tatler .

"…Chef Dennis Villalobos is the resto-bar's new top chef. Chef Dennis worked in La Tasca for several years before he became the personal chef of Ramon Tuason. He then worked his way up as head chef of Executive Dining Lounge in 2005. "My passion has always been in culinary arts. Spanish cuisine is my specialty. Chef cooking is not just following recipes. It is the ability to select the right materials and knowledge on how to prepare and serve food attractively. The chef must understand the diners. Cooking recipes should be planned with the idea of making them appetizing. Food must also be safe and satisfying . . .
The secret of Tropezz's success lies in its wide variety of menu like Filipino, European, and Chinese. "Tropezz food is a bite of what we can do for bigger events. Our menu is not necessarily defined as strictly one type of food or cuisine. People like our food because it is not something readily available in other restaurants.
